The Baked Escape: A Sweet Spot to Slow Down
Some dreams rise slowly, like the perfect batch of cinnamon rolls. That’s exactly how The Baked Escape came to life, after nearly a decade of planning, saving, and dreaming. What started as a college student’s way to unwind by baking birthday cakes and surprise treats for friends eventually turned into one of Billings’ coziest spots to grab something sweet and made-from scratch.
After bouncing between majors at Carroll College, the bakery founder, Taylor Moore, realized the thing that brought her the most joy was right in her hands—whisks, mixing bowls, and family recipes passed down for generations. She worked at a little bakery in Helena, sharpened her skills at The Art Institute of Seattle, and earned her degree in Baking and Pastry before coming home to Billings. From there, it was five years of hard work at Candy Town USA, managing the kitchen and perfecting her craft as a chocolatier. All the while, her mom kept nudging her to team up—and last summer, the timing finally felt right. They opened The Baked Escape together, turning a lifelong love of baking into a shared dream made real. They opened a cozy, welcoming spot that feels like an extension of their kitchen at home.
The idea was to offer something different in Billings. Taylor noticed there weren’t many sit-down places where you could relax with a baked good, sip a coffee, or enjoy a proper crepe. So, she created the kind of space she had always wanted to visit. Everything is made from scratch using family recipes passed down through generations. It’s a place where people come to reconnect, relax, play a board game, or just enjoy a good book and delicious scone.
And speaking of scones, they’re a crowd favorite right up there with the cinnamon rolls, fruit-filled cinnamon rolls, and, of course, the crepes. Taylor takes a lot of pride in the flavor combinations and loves the freedom to get creative in the kitchen, whether it’s trying out new scone mix-ins or switching up the décor in the dining room.
The Baked Escape has already made some beautiful memories with customers. One family came in for Christmas sugar cookies after their oven broke, and Taylor made sure they didn’t miss out on their tradition. Another came in to grab food for a family member with cancer who hadn’t had much of an appetite, until Taylor’s food hit the table. It’s those quiet, meaningful moments that make all the hard work worth it.

More than one customer has said their cinnamon rolls are the best in town. For Taylor, that kind of feedback hits home in the best way. The bakery also gives back by donating gift cards and baked goods to silent auctions and community events, and they proudly collaborate with Infinite Patriot, a local group that supports veterans and first responders.
There are always new flavors and fun events happening at the shop, from painting parties to murder mystery nights, and you can catch all of them on Facebook. Taylor tries to host something every month, and there’s talk of a food truck in the near future to bring even more of their scratch-made goodness out into the community.
